INGREDIENTS
- 250g pasta (fusilli, penne, or farfalle work best)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, finely sliced
- 1 red bell pepper, diced
- 100g feta cheese, crumbled½ cup black olives, pitted and halved¼ cup fresh parsley, chopped
- ½ cup Simply Deli Creamy Dressing
- 2 tbsp olive oil
- Salt & pepper to taste
DIRECTIONS

Instructions:
- Cook the pasta
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Drain and rinse under cold water to stop the cooking process.
- Set aside.
- Prepare the vegetables
- While the pasta is cooking, dice the cucumber, bell pepper, and slice the red onion.
- Halve the cherry tomatoes and olive.
- Mix the salad
- While the pasta is cooking, dice the cucumber, bell pepper, and slice the red onion.
- Halve the cherry tomatoes and olives.
- Add the dressing
- Pour Simply Deli Creamy Dressing over the salad.
- Drizzle with olive oil.
- Toss gently until everything is well coated.
- Season and garnish
- Add salt and pepper to taste.
- Garnish with freshly chopped parsley for a burst of colour and flavour.
- Chill and serve
- For best results, refrigerate for 30–60 minutes before serving to allow flavours to meld.
- Serve chilled.
